My husband and I recently visited St. Martin, a small island in the eastern Caribbean, which is shared by the French (St. Martin) and the Dutch (St. Maarten). Le Ti Coin Creole “The Little Creole Corner” is a restaurant located in Grand Case, a small fishing village on the French side of the island. The restaurant is owned and operated by Chef Carl Phillips, a tall, gregarious man with an infectious smile. Chef Carl is an incredible cook, and Le Ti Coin Creole’s location allows it to serve the freshest seafood possible. We had the stuffed crab and fish fritters appetizer, accompanied by the hottest home-made hot sauce I’d ever tasted. For our main course we both got the stuffed whole snapper of the day – absolutely delicious, and finished with a coconut tart and sweet potato pudding. The wine list is all French and well-matched with the food. We tried a bottle of Côtes de Provence “Un Brin de Rosé, perfect for the fish/seafood and hot weather.
